Joseph Hurlbut was a farmer. It is presumed that he removed to Woodbury with his parents as early as 1682. When he was baptized he was refered to as an adult. According to Hon. Edwin Stearns, "was the first person who settled in the Society of Gilead in Woodbury." As a shareholder in 1702, he received a portion of the meadow on Shapaug River. Joseph and his wife Mary were admitted as members of the 1st Congregational Church of Woodbury on June 21, 1729.

Some of this information is questionable; for example, the existence of two sons named Joseph where the first lived long enough to marry and have children.
